I know everyone is absolutely crazy about pumpkin right now and I am no different. I can’t even tell you how many cans of pumpkin I have gone through this month!
This Paleo Pumpkin Pie Bites recipe has been one of my favorite pumpkin recipes this fall and I am so excited to share it with you.
If you are a fan of Larabars, you will definitely love these little bites. They are the same concept. Nuts and dried dried fruit are broken down in a food processor but then instead of being shaped into bars, I roll them into balls because it’s just easier. If you prefer bars, just line a square pan with parchment paper and press the mixture into it. Let it firm up in the fridge for a few hours and then cut into bars.
So to make these feel more like pumpkin pie, you just add pumpkin puree (fresh or canned) and pumpkin pie spice to your ground up nuts and dried fruit.
They are super delicious and perfect for this time of year. Make a batch on Sunday afternoon and store them in your fridge all week for any time you need a quick snack!
Paleo Pumpkin Pie Bites
1/2 cup raw almonds
1/2 cup unsweetened coconut flakes
1/2 pound Medjool dates, pitted and chopped
1 cup dried apricots, chopped
1/4 cup pumpkin puree
¼ teaspoon pumpkin pie spice
¼ teaspoon salt
Put the almond and coconut flakes in a food processor and pulse until the nuts are broken down and chunky. Not all pieces need to be the same size. Add the dates, apricots, pumpkin puree, pumpkin pie spice, and salt, and continue processing until everything looks like coarse crumbs and sticks together.
Take a heaping tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
